Shirasu. しらす。
There is a yakitori restaurant in Takamatsu called Sansho Fujitsukacho. Yakitori are Japanese chicken skewers but there are plenty of alternative options on the menu as well.
After my izakaya visits, I'm quickly learning what dishes I will order next time around. This is a great learning experience and particularly useful for when I host others in the city. I have discovered that I am not a liver person. Nor am I eager to have more chicken skin on a skewer. You can't go wrong with a bit of thigh though.
Here there were plenty of delicious dishes. Fresh vegetables, chicken ball skewers, but the surprise highlight for me was shirasu.
I was told this had a very Japanese taste. I assumed that meant very fishy but actually it was super fresh, tasty and quite subtle. Shirasu are whitebait, usually sardines. Here it was served with radish and a little bit of soy sauce. I found I kept going back to it and did not really share it with anyone else. I'll be on the lookout for more! Below is a picture I took halfway through eating it after I realised how much i liked it.
